Chicken Breast

1 Punet, cut into half
Cherry tomatoes
250 gram
Sprouts
1/2 bunch
Coriander
200 ml
Thickened Yoghurt
1 splash
Olive oil
1 pinch
Salt
1 pinch
Pepper
Cajun chicken with wok tossed cherry tomatoes salad

This recipe incorporates a Pyro Lux oven however a normal oven can also be used at the same temperature

  1. Turn e-line pyro lux oven to roast function at 180 degrees
  2. Coat the chicken breast with Cajun spice. Drizzle with a little oil and cook in the steam oven for 18 mins
  3. Whilst chicken is cooking - Heat up your e-motion wok round bottom wok on the trivet. When hot drizzle a little oil and quickly toss the cherry tomatoes, sprouts and coriander together. Season with salt and pepper and set aside
  4. When chicken is cooked, rest for a few minutes then slice very thinly
  5. To serve - place the warm cherry tomato salad on the bottom of the plate, fan half the chicken breast on top with a small scoop of yogurt. To garnish, drizzle of olive oil and chopped coriander on top
