  1. In a large bowl toss leeks, thyme, olive oil, squeeze 1 lemon and season to taste with salt and pepper. Have your salmon ready on the side
  2. Lay out foil on table making sure you have enough foil to wrap your salmon
  3. Place the sliced lemons on the foil with the sprigs of thyme
  4. Drizzle olive oil and pinch of salt and pepper down onto the foil
  5. Place salmon on the foil
  6. Fill the salmon with salsa mix
  7. Place sliced lemon and sprigs of thyme on top of the salmon
  8. Drizzle with olive oil and season with salt and pepper
  9. Wrap foil tightly around the salmon
  10. Place in the oven at 200 degrees for 40 min and rest for 20 min before serving
  11. Seasonings: Olive oil Salt Pepper
