Making Ricotta Fancy
  1. Bring the milk to a boil
  2. Turn off the heat add in the salt and lemon while stirring
  3. Stir till curd appears and place into small strainers
  4. Set aside to cool
  5. Now to make it a little bit fancy! – Toss all together in a bowl
  6. Turn ricotta upside down place fig mix on top drizzle a little with olive oil and cracked pepper bake for 5 min at 220 degrees
  7. Enjoy on some good sour dough
